Where are the seeds on a gardenia flower?
If your variety is thunbergia, it's hard work getting the seed! You have to smash the fruits open and scoop it out by hand. Use a hammer or other blunt instrument to get the fruit open, and then use a nail or heavy spoon to scrape out the seed. Pretty unforgiving work!

If you have gardenia "jasminoides" or the common gardenia, your work will be a little easier at getting the seeds from the fruit (which follows behind the bloom), but from seed it can take 2 to 3 years for a new plant to bloom, whereas if you do air layering or take a cutting, you'll have a blooming plant in a year. Goodluck!
